When you’re in Park City, you’ll probably be on the go, most days. But when you have moments of downtime in your vacation rental, you’re bound to get hungry! Here are some easy Utah recipes to whip up in the kitchen:

Rainbow Trout Fillet

Prep time: 20 minutes

Cook time: 8 minutes


• 4 rainbow trout fillets (boneless & skinless)
• 2 tsp soy sauce
• 1 tsp brown sugar
• 1 tsp garlic (minced)
• 1 tsp ginger (minced)
• 4 green onions (chopped)
• salt & pepper to taste
• olive oil

Steps to Prepare:

1. Spread the soy sauce on the fillets with a brush, then season with salt, pepper, and sugar. (Sea salt and freshly ground black pepper will go a long way and really make this dish stand out.)

2. Drizzle olive oil on a frying pan and heat to medium-high. Fry the garlic and ginger for a minute, until it begins to turn golden, stirring frequently to avoid premature crisping. Add the fish fillets. Flip once they begin to crisp. Each side should take about 3 minutes. You know they’re done when they flake easily when prodded at with a fork.


Chocolate Lava Cake

Prep time: 10 minutes

Cook time: 1 hour


• 1 box of brownie mix
• caramel ice cream topping
• chocolate ice cream topping
• whipped cream
• sprinkles (optional)

Steps to Prepare:

1. Head down to the store for your ingredients and grab a box of whatever brownie mix looks best to you, although, we recommend one that comes with extra chocolate chunks. You might as well go all out!

2. Follow the instructions on the brownie box mix; it should take around an hour. Let it cool before cutting the brownies into squares.

3. Prepare dessert plates by drizzling some of the caramel and chocolate spread on the plate first for style. Add the brownie, then drizzle more chocolate and caramel, then add a dollop of whipped cream.

4. Sprinkles are optional, of course, but we love them!


Mountain Cocktail

Prep time: 5 minutes


• ¼ tsp dry vermouth
• ¼ tsp sweet vermouth
• 1 ½ oz whiskey
• 1 egg white
• ¼ tsp lemon juice
• ice

Steps to Prepare:

1. What better way to kick back in the kitchen of your mountain town vacation home? Whatever time of year, a mountain cocktail is one of our favorite things to mix in the kitchen here. Simply shake the ingredients in a mixing glass with ice.

2. Strain into a cocktail glass and enjoy it by the fire.
